Snejanka salad and Tarator (Yogurt and cucumbers cold soup)


Tarator is a popular summer, chilled soup in Bulgaria. The option of drained yogurt called Snow White salad (Snehjanka) or dry tarator (su-h tarator).  We do (my husband and I ) our home made yogurt for many years and it  becomes  so thick  -to cut with a knife! (a small metaphor)  ;) I remember summer evenings in the garden, tarator was always there if there was not  Shopska salad :)

Snow-white salad

1 (750g) container plain yogurt (without gelatine, whit active culture- Lactobacillus Bulgaricus-home made:)) otherwise you must drain the yogurt in a colander for a few hours or use crème yogurt
3/4 cucumber - peeled and diced (Long English cucumber)
2 tablespoons olive oil
salt and pepper to taste
3 tablespoon chopped fresh dill
3 cloves garlic, peeled and crushed in a wooden mortar
Kalamata olives and minced fresh walnuts for garnish
no lemon jus added or vinegar!

Put everything in a bowl and mix. To make tarator, just add water. It doesn’t contains olives.
