Lobster and Potatoes salad / Картофена салата с омар, грах и царевица

This salad is one of my favourites. I founded it in a summer issue of TASTE (magazine for food and drink), but change it fallowing my taste so here is the result:




Lobster and Potatoes salad
4 serves

3 large lobster tails, meat is braised in butter and garlic, and cut into large chunks
2 (300g) white or red skinned new potatoes, boiled and cut into quarters
¼ cup green onions
2/4 cup canned corn kernels
2/4 cup canned peas
2 tbsp mayonnaise
1tbsp fresh dill, chopped
freshly ground pepper and salt
freshly squeezed lemon jus (1 lemon)
nice drizzling whit olive oil

 Boil and chill potatoes. Drain peas and corn kernels. Toss to combine whit the rest of ingredients.
Serve it on a bed of lettuce.

Pairs well with  Chardonnay or Semillon.
