Ruska salata / Salad Olivier



Ruska salata –“Russian” salad is a very popular salad in Bulgaria. It is known also as salad “Olivier”. It consists of diced potatoes, vegetables and meats bound in mayonnaise.
The amount and proportion of certain vegetables might be different, depending on your personal taste.

1 1/8 lb Russet potatoes- piled, boiled and diced
1 cup diced pickles
1 carrot, boiled and diced
2 eggs, boiled hard and diced
½ cup corn kernels
½ cup peas from can
½ cup mayonnaise
For meat you may use Bologna salami, smoked chicken, canned tuna or even smoked fish. If you wish you can leave out meat content at all.
For this recipe I have used tuna.
Salt, black pepper and teaspoon of mustard

In a large bowl combine all ingredients. Chill in refrigerator about an hour. Scoop and serve on a plate.
